Smoked salmon and sweet potatoes on a grill

Mmm... Barbeque...
I usually grill just honest meat on the grill but his time I wanted to try something else. I grilled a sweet potato and smoked salmon. As a side I cooked an artichoke. I heard that you should reserve 1 artichoke per person but as we had other things as well 1 artichoke was enough for 2 people.

1 lemon is enough for 1 artichoke and sweet potato.
Start the whole thing by steaming the artichoke because it can take up to an hour before it’s ready. Cut one third of the top of the artichoke. Also cut the stalk so that about 1 cm is left attached to the vegetable. For steaming you can use those fancy pots with steamer function in it or just put small amount of water on the bottom of the kettle with three slices of lemon and a bit of salt. Place the artichoke upside down to the kettle (some say it should be the stalk towards the water but I did it this way). The artichoke is cooked when you can pull out the leaves with no trouble at all. The artichoke also is ready if a small stick goes through the stalk. Serve the artichoke with melted butter that is seasoned with lemon juice. Eat only the “white” and soft parts of the leaves leaving the green and hard parts on the plate. When you come to the heart do not eat part that is “hairy”, but the soft part under the white hair.

Put the fillet(s) skin side on the grill.
Preparing the smoked salmon (4 people)

300 g salmon fillet
Salt
Pepper
Sugar
Liquid smoke




Season the salmon with salt, pepper and a bit of sugar. Drizzle liquid smoke on the fish according to your taste. Place the fish skin side on the grill and grill the salmon for 30-40 minutes on a low fire.

Preparing the sweet potato

1 sweet potato
1 chested lemon
Chili powder
Slice the sweet potatos long side and season them.
Salt
Pepper
Olive oil


Cook the sweet potato half soft so that it almost is ready but not quite. Take it out from the kettle and cool it down. Slice it long side to about 6-8 pieces. Mix all the ingredients and season the slices. Drizzle some olive oil on top and grill about 1-2 minutes both sides.

Bruschetta

Bruschetta!

Dip the white bread in olive oil and fry the bread golden brown on both sides.

Slice the tomatoes and basil and mix it together with minced garlic. Add some olive oil and vinegraitte.

Serve the tomato basil mix on top of the bread. Voilá, you have made yourself a bruschetta!

Mix the garlic, tomatoes and basil
with some olive oil and
vinaigrette.

Fry the bread golden brown.


Water melon shake


This is just so easy that everyone can do it!

You will need water melon and ice. Scoup the melon out and put the water melon pieces with ice in to a mixer and turn the mixer on.

Coke can chicken

Summer and barbeque season! YES! I found this recipe from a book I got but I guess this is a quite common bbq recipe in the states. Why I call my recipe a coke can chicken is just because I am using a coke can with my own mix in it, you can also use beer cans with beer in it as many other recipes so suggest.

You need one whole
chicken.
You need

1 chicken
1 empty coke can
Olive oil
1 smokey chipotle pepper
Sweet pepper powder
Salt
Pepper

Mix the ingredients in olive oil and rub it well all over the chicken, also inside.











Rub the seasoning well on
the chicken and place
the chicken in a
sitting position on the can.
The ingredients in the can:

Couple of whisks estragon
Couple of whisks rosemary
Couple of whisk of thyme
Couple of whisks of oregano
2 dl water
Liquid smoke according to your taste (I used 1 table spoonful)
1 tablespoon of apple cider vinegar
3 cloves of garlic

Put all the ingredients in the empty coke can.

Place the chicken over the coke can and put the coke can chicken on the grill. In this way the chicken will get the moisture from the liquid in the coke can and all the flavors too. Grill the chicken about an hour or when the breast part of the chicken is 70 ˚C.




Serve the chicken with rice and granite apple sauce. For the sauce use 3 dl of yoghurt and add 1 clove of minced garlic in it. Take the seeds of the granite apple and mix it with the yoghurt. Add some pepper and salt according to your taste.

Focaccia

Serve with summery salads :)
Summer and Italian tastes. Here is a nice recipe :)

9 dl flour
3 dl water
Oil
Sea salt
Rosemary
25 g yeast
Olives
2 cloves of garlic

Mix the yeast in water with same temperature as your hands. Warmer temperature will kill the yeast. Add some salt and oil. Add flour in three parts kneading the dough all the time.

Cut the garlic and olives in pieces and mix it in the dough. Let it rest for 20 minutes in a square vessel.

Put holes in the dough with your finger. Put some rosemary in the holes. Pour quite a lot olive oil on the dough and then sprinkle the sea salt on it.


Let the focaccia to be in the oven for 30 minutes in 180 ˚C.


Bake the bread 30 minutes in the
oven.

Mix the garlic and olives in
the dough and place it in
a square vessel.
Put rosemary in the holes,
sprinkle salt and pour oil
on the dough.
